Lemons stored in cold storage facilities using specially developed refrigeration technologies can be kept without spoiling for up to five months in storage rooms with a relative humidity of 90% and a temperature ranging between 14°C and 15°C.
In addition to this long-term storage of lemons, short-term storage is also carried out, particularly in Western countries, for the purpose of regulating the market. For this purpose, short-term storage is conducted at a temperature of 3-4°C and 90% relative humidity. The product is continuously monitored throughout storage, and storage under these conditions lasts for a maximum of 3-4 weeks. Lemons removed from storage should be made available for consumption immediately. This is because storage damage generally begins to become apparent 10 days after the lemons are removed from storage.
