Bananas can be ripened at specific temperatures between 14-20 °C for varying periods of time. Indeed, ripening can be achieved in 4 days at high temperatures and in 10 days at lower temperatures. For this purpose, bananas are loosely stacked and kept in a room with the desired temperature and 95% relative humidity. The temperature must be carefully controlled during storage and ripening.
