The optimal storage condition for broccoli is storage at 0 °C with 95-100% relative humidity. Harvested broccoli should be immediately frozen or cooled with water. The product should then be placed in 0 °C storage. If the product is stored at 0 °C in packaging and stacking that allows sufficient air circulation, the storage period can be 10-14 days. Longer storage periods result in color loss, yellowing, stem breakage, and softening. Wrapping with film can be a good method to maintain moisture during storage. However, the films used must have sufficient permeability. Otherwise, damage and unpleasant odors may occur in the product. Broccoli should not be stored with fruits that release large amounts of ethylene, such as apples and pears. This is because ethylene causes the sprouts to turn yellow.
