Plums should be cooled within a few hours of harvest. Internal spoilage is triggered by delays between harvest and the first cooling. Fruits to be packaged the next day should be cooled to 5-10 °C. Depending on the ripeness at harvest, internal spoilage symptoms occur in plums stored at 2-9 °C for more than 1-3 weeks. Fresh plums are not suitable for long-term cold storage. It is appropriate to store plums at 0 °C with 90-95% relative humidity.
