Carrots can be stored for 7-9 months at 0-1 °C in an environment with 98-100% relative humidity. Even under these conditions, 10-20% of stored carrots may rot and spoil after 7 months.

Storage time is 5-6 months in an environment with 90-95% relative humidity at 0-5 °C.
Pre-cooling the product immediately after harvest to below 5 °C extends its storage life. Rot occurs more quickly in roots that have not been pre-cooled.

Carrots harvested under wet conditions can be washed before being stored in the warehouse. This eliminates many microorganisms that cause decay. Furthermore, air circulation between the cleaned carrots will be easier, which is very important in terms of removing respiratory heat.
